seriously ridiculous brownies

sometimes, a girl’s just gotta bake. it’s not for an occasion, not because i’m craving sweets, and not something fancy or elegant – sometimes, i just want to make sticky, decadent, ridiculous sweets to feed to my friends. and on a weekend like this, when my friends elias and nicole are getting married and we’ve got our friends mike and katie staying with us, i just want lots of goodies around to munch on between the pedicures, errands, and (of course) regular partying.

but who wants a fancy cake or finicky cookies when you can make double layer, super chocolatey, creamy and fudgy, seriously ridiculous cheesecake brownies? not me.

to make these guys, i combined two different recipes from the king of desserts, david lebovitz. i layered the base of the absolute best brownies with the creamy topping from the cheesecake brownie recipe, creating these crazy, super decadent, messy treats. you could easily just follow one of these recipes and get a delicious brownie, but i figured i wanted to make these goodies as crazy good as possible. which, for me, means adding salt and some serious cream cheese.

seriously ridiculous brownies

6 tbsp unsalted butter, cut into pieces
8 ounces semisweet chocolate, roughly chopped
3/4 cup sugar
1 tsp vanilla extract
2 eggs, at room temperature
1/4 cup all-purpose flour
1/2 tsp salt
8 ounces cream cheese, at room temperature
1 egg yolk
5 tbsp sugar
1/2 tsp vanilla extract

preheat oven to 350 degrees. in a medium saucepan over low heat, melt butter until smooth, then add chocolate. stir gently until chocolate is completely melted, then remove from heat. mix in sugar and vanilla, then add eggs one at a time, beating until smooth. add flour and salt, stirring quickly for one full minute. (yes, really. it makes a difference.)

line an 8 or 9 inch pan with aluminum foil, leaving enough on the sides to grab. pour chocolate batter into pan, spreading so that it’s even. in a medium bowl, combine cream cheese, egg yolk, sugar and vanilla, stirring until smooth. spoon over the chocolate mixture, then use a spatula or knife to swirl the two layers together. bake until the middle is just set, about 30-34 minutes.

now for the hard part – let these cool completely. use the foil to lift the brownies out of the pan and place on a cooling rack if you’re impatient, since this will help them cool a bit faster. use a long knife to cut them into squares, then serve on their own with coffee, ice cream, or pretty much anything else.

  1. hmmmm… Brownies, Fluffy or heavy, With nuts or without, Dry or wet, Dark chocolate or white… Always finds a way to make us say “mhmmmmmm….”
